Abstract | Završni rad polazi od općenitih informacija o restoraterstvu, definirajući različite vrste
restorana i njihove osobine. Budući da je tema ovog rada bife restorani, u nastavku je opisan
njihov razvoj od srednjevjekovnog preteče švedskog stola pa do današnjih varijanti bife
restorana. Objašnjene su njihove karakteristike, način poslovanja, izazovi s kojima se susreće
menadžment, kao i ponašanje potrošača. Središnji dio završnog rada obrađuje anketu
određenog uzorka ispitanika kojom se pokušalo odgovoriti na pitanje postoji li interes za bife
restoranima u Zagrebu. Anketa je uključivala 129 ispitanika, a pitanja su, uz demografske
osobine, ispitivala i njihova prethodna iskustva s bife restoranima, upoznatost s konceptom,
zadovoljstvo uslugom, ponudom i dr. Dobiveni rezultati ukazuju na to da su ljudi informirani
o konceptu bife restorana te da postoji interes za takvom vrstom restorana u Zagrebu. |

Parallel abstract (English) | The thesis starts with general information about restaurant business, defining different types
of restaurants and their characteristics. Since the topic of this thesis is buffet restaurants, it
continues by describing their development from swedish smorgasbord to today's variants of
buffet restaurants. Their characteristics, the way of doing business, the challenges they face,
and the behavior of consumers are explained. The central part of the thesis deals with a
survey attempting to answer the question if there is any interest for buffet restaurants in
Zagreb. There were 129 respondents and the survey, besides demographic characteristics,
asked questions about their previous experiences with buffet restaurants, familiarity with
the concept, satisfaction with the service, offering and more. The results indicate that
people are informed about the concept of buffet restaurants and that interest for that kind
of restaurants in Zagreb exists. |
