Abstract
Rad se bavi gastronomijom kao ključnim elementom u turističkoj ponudi Hrvatske. Gastronomija se sve više promatra kao važan dio nematerijalne odnosno gastronomske baštine pojedine regije te postaje važan faktor u turističkoj industriji. Eno gastronomija se opisuje kao specifični oblik gastronomije koji kombinira hranu i vino. Također, opisana je priprema, kulturni značaj i regionalna pripadnost šesnaest tradicionalnih jela. U svrhu otkrivanja navika i stavova mladih turista prema trenutnoj turističkoj gastro ponudi Hrvatske, provedeno je istraživanje. Istraživački dio ovog rada osmišljen je putem anketnog upitnika. U istraživanju su se analizirale navike i stavovi mladih turista prema hrvatskoj gastro ponudi, a ciljana skupina bila je generacija Z. Pretpostavljalo se kako većina ispitanika nije upoznata s bogatom gastronomskom ponudom Hrvatske. Važno je naglasiti i regionalne razlike u gastronomiji kako bi se dodatno promovirala raznolikost ponude i privukli turisti u manje poznate destinacije. Stoga bi marketinški napor trebao biti usmjeren prema intenzivnijoj promociji tradicionalnih specijaliteta i kulinarske baštine zemlje. Drugi važan aspekt istraživanja uključivao je analizu društvenih mreža te njihovu uloge u promociji turističke ponude. Uočeno je kako manji broj ispitanika prati turističke stranice na društvenim mrežama, što potvrđuje izazove digitalnog marketinga u turizmu. Zaključno, naglašeno je kako treba osnažiti svijest i vrijednost o hrvatskoj gastro ponudi, posebno među mlađom generacijom. Valjalo bi uložiti veće marketinške napore u promociju domaćih jela s ciljem očuvanja hrvatske gastronomske baštine.
Abstract (english)
The paper examines gastronomy as a crucial element of Croatian tourism. Gastronomy is increasingly seen as an important part of a region's cultural gastronomic heritage and a significant factor in the tourism industry. Eno-gastronomy, a specific form of gastronomy that combines food and wine, is discussed. Additionally, sixteen traditional dishes are described highlighting their preparation, cultural significance, and regional origins. The data was collected using a survey. The research aimed to discover the habits and attitudes of young tourists towards the current gastronomic offerings in Croatia. The targeted group was Generation Z. Results show that the majority of respondents are not familiar with the rich gastronomic diversity in Croatia. It is essential to highlight regional differences in gastronomy to further promote the diversity of offerings and attract tourists to lesser-known areas of the country. Thus, marketing efforts should be intensified to promote traditional specialties and culinary heritage of the country. Another significant aspect of the research was an analysis of social media and its role in promoting tourism. A minority of respondents follow tourism pages on social media, highlighting the challenges of digital marketing in the industry. The study concludes that it is crucial to increase awareness of Croatian gastronomy among younger generations. To preserve the country's culinary heritage, greater marketing efforts should be made to promote local dishes.
